A Czech specialty is pickled camembert – hermelin cheese with garlic and spices. Another one is the spicy beer cheese with onions. In the fish department you will find the pickled rolled herring and the smoked herring. Headcheese with onions is quite popular as well as pickled sausage. You

might come across a bramborak – a potato pancake with garlic and pepper. They are also sometimes served as a side dish. These specialties – hors d’oeuvres – can often be found in cheap folksy restaurants where the kitchen doesn’t offer anything else and most guests only come for the beer.
